I returned an accessory once, it was pretty straightforward, just follow their online instructions. For a bike, I imagine it'd be a bigger box but the process should be similar. You usually have a certain window, like 30 days.

Do these bikes come fully assembled or do I need to put a bunch of stuff together myself?

Mine was mostly assembled, just had to attach the front wheel, handlebars, pedals, and seat. Took about 30-45 minutes with the included tools.

It's like 85-90% assembled. You definitely need to do some minor setup, but nothing crazy hard.
